This is completely optional.
Anchovies – you may omit these but they really do add the authentic Caesar salty taste to the salad.
Dressing – as you’ll see below, I take the standard keto Caesar dressing and make it my own! Now the sauce will start to thicken a little at a time.Once you have a base, start to wiggle the hand blender a little so that it starts to draw down the rest of the oil.
After a while of wiggling, you can start lifting the hand blender up and down until all the oil has been mixed in and you have a creamy and fine caesar dressing.
Add some tamari soy sauce and season to taste with fine grain salt and black pepper.
If you want your caesar dressing a little looser, you can mix in a few tablespoons of water, but basically it should be a fairly thick dressing.

I remember the day I found out that Caesar salad dressing had anchovies in it {insert sick emoji face here!!}.
Stir to evenly coat. You simply get exactly what's on the ingredients list. If you like your Caesar with a little more parm and a little less lemon juice, you can alter it to suit your tastes. Adaptable recipes are the best and most likely to be actually made, rather than a prescriptive recipe.
This keto Caesar salad starts with a huge base of leafy greens, I like baby kale, but any leafy green is superb.
However, Caesar dressing is a special dressing because it is created for a specific salad.
With a homemade dressing, you know exactly what you're getting.
The paper helps to absorb any excess water and helps to keep the lettuce crisp.
Make your mayonnaise and pour it into a jar with a lid. Quite simply a tasty and filling salad that most people always come back to.
My LCHF recipe contains, among other things egg, anchovy fillets, rapeseed oil and olive oil. Just buy these two things on your way home via the grocery store:
1: A hot rotisserie chicken (without stuffing or sauces).
2: A bag of salad or leafy greens.
When you get home it takes no time at all to put the keto Caesar salad on your kitchen table and throw some extra ingredients together that you have probably sitting in the fridge already such as cheese, olives, avocado, etc.
I will use mixed greens if that’s what I have available too. Pour into a glass bottle/jar and store in the fridge (up to 2 weeks) until ready to use. I cannot emphasise enough how incredibly easy and nutritious it is to make your own mayonnaise.
Substitutions & variations
One thing that’s fun about a keto Caesar salad is that you don’t have to stick with the standard ingredients.

Swap out the typical romaine lettuce for another variety. This will quickly and easily produce a dressing that is smooth, fine and well mixed.

Caesar dressing has a good nutritional value. All you need is a good hand blender that you run at full speed.
Tomato – optional, but traditional salads always need the colour and flavour of a few cherry tomatoes.
